Ark of Taste

Murray Cod, Maccullochella peelii peelii.The Ark of Taste is an international project managed by the Slow Food Foundation for Biodiversity which aims to preserve small-scale traditional food production. Ark of Taste foods are strongly linked to local cultures and traditions but are threatened by industrial agriculture, the standardization and large-scale distribution of global food markets, and environmental degradation.

The Ark currently contains over 3000 food products worldwide, incorporating an extraordinary heritage of fruits, vegetables, animal breeds, cheeses, breads, sweets, cured meats and more. Australian Ark of Taste products currently number 23 and full details of these products are available on the Ark of Taste website.

Slow Food Mildura has contributed to the Ark of Taste by successfully nominating the Murray Cod and Samphire, and has a pending nomination for Eel-Tailed Catfish.
